Carbonara Pasta Frittata


Prep Time 30 mins
Cooking Time 20 mins
Serves 4
Ingredients

7 eggs, lightly beaten
1/2 cup Anchor Culinary Cream
80 g Anchor Unsalted Butter
4 Sausages, sliced
1 onion (medium sized) chopped
2 cloves Garlic, chopped
300g Penne, pre-cooked al dente
120 g Mainland Tasty Light shredded
1 tsp Parsley, chopped

Method
1. Pre heat oven to 200*C. In a medium sized bowl, beat eggs with a whisk, then whisk in the Anchor Culinary Cream and set aside.

2. Heat the Anchor Unsalted Butter in an ovenproof, non-stick skillet over medium heat.  Add sausages and cook until lightly browned, about 6 mins.

3. Add onion and garlic and cook until translucent, about 2 mins. Season with salt and pepper.
4. Add pasta and toss to distribute the ingredients evenly.  Gently pour in the egg mixture, Mainland Tasty Light and parsley. Cook for about 5 mins.

5. Transfer the pan to the oven and bake for about 12-15 mins, or until a knife inserted in the centre comes out clean.  Loosen the edges with a silicone spatula and slide the frittata onto a cutting board.

 then transfer to the bottom for baking!



 you need an aluminium frying pan which can go straight into the oven after frying!!
otherwise, you need to wrap the handle with silver foil!!
